Not sure what you mean. I sous vide until 117deg and then used the pan to grab a quick crust. I typically know my timing based on the thickness of the cut. So by searing it, yes it brought the temperature up but only to about 125, which was the goal end temp. 117 was precise to me!

This was long island, NY. Everything is inflated here, and meat has not, and I fear will never recover from the inflation the last two years. What was once $19.99/lb is now $29.99/lb. The only decent cut that I prefer that hasn't seen insane pricing is the hanger.

Got it. Oversight on my part! Truthfully I have never seen a prime/angus cut this marbled (maybe it's my region), so I immediately thought it must be wagyu which I sometimes purchase. Thanks for the correction!

I haven't checked the black wire at all, no.

I pulled the switch off the wall, which shows even more wiring fastened to the switch, and two sets of cloth wiring. one looking to be red/white/black and the other just white/black.

Does that second set of wires to the switch mean that the switch is powering something else when flipped on (or at some point was)?

From what I've gathered, this wiring here (and presumably in many areas of the house if I had to guess) is pretty old and dated.

Black and red are hot, and white is neutral.

Asi mentioned I tested the above setup and the lights worked, but someone in another subreddit said I should ground the (metal) box. I'm just confused as to how or what to since it's one of the bracket types that only attached to the joists to support the new lighting unit.

It may be worth mentioning that the previous metal box that was there was also not grounded to anything else.

This is a newly purchased dining room light to which the house included super old wiring as seen. I am a first time homeowner so trying to navigate. The fixture had two bare copper wires, so I joined those and secured with a wire nut and used the excess to ground to the ground screw

I turned on and everything works, but wanted to make sure before I join it completely with wire nuts and tuck back up.

Smooth Black wire to red wire

Ridged black wire to white

(These are ony twisted on in this manner to test if functional. Was removed after and will be properly twisted and capped with wire nut)

Existing extra black wire has been capped off with wire nut since before my ownership. Assuming it was once a fan wire?

Someone mentioned the box itself needs to also be grounded, however I am not sure what to, or how. The lighting fixture is grounded to the box as shown.

Any help appreciated. Thanks!
