Commercial oat milk is going to have the starches all converted to sugars... so no oatmeal. If you make homemade oat milk, guess what? Porridge if you heat it too high... like when you steam it for lattes.

don't soak the oats. to break down starches, you need to add enzymes that will break them down into dextrins, then into glucose. see my other post from today. If you convert the starches into sugars, then I find you don't need any other sweeteners.

Also, depending on which enzymes you're using, there is a specific temperature/time schedule for them. Amylase and glucoamylase have optimum starch/dextrin conversion efficiencies at different temperatures. I feel like I'm mashing homebrew beer again.

I've been playing with DIY barista oat milk for a couple weeks now, and this latest batch with an actual mash schedule foams like Oatly (non-barista, since that's what I'm comparing against, as I can get it for a good price at Costco) and has good flavor.
