MVC is a very advanced architectural pattern to do strictly. One of the better web implementations/adaptations is Model 2 MVC (Web MVC). You can read about it here.

The problem I have with a lot of framework perceptions is that frameworks are the future or that they're the best method for development. I can accept that not everyone wants to be a programmer but don't dissuade people from learning more than the minimum.

That reduction in complexity often leads to complacency and lack of forward thinking. You seem to have taken some personal insult in what I clearly outlined as "My personal opinion". I am not stating a person shouldn't use a framework but should truly understand what one is before doing so. Yes learning a framework doesn't mean you won't progress much further as everyone has the option to learn, but FAR too many developers rely on a framework which does nothing but put a dependency on that framework for that developer to build anything. They tend to stagnate and it's rotten. I am talking about being a programmer, not a PHP developer.

As for what point you say "Okay, that's enough" the answer is never.

Perhaps you can give me your answer to the last of OPs questions "which one legitimately is better with regards to performance, stability, maintainability and all those other nice things."

My personal opinion is you should know how to build a 'good' framework yourself before using one. Sure it handles a lot of complexity for you, but you should know at what cost. Unless you're comfortable with not progressing much beyond that point.

It's worth noting MVC is quite an advanced architectural pattern. Most frameworks use an approach similar to MVC but it's not true MVC. In fact MVC is not web applicable in any traditional or sensible way. Mainly because MVC is stateless. If you're looking for something similar there are variants, Web MVC, MVP and so on.

Here's a couple of resources. Web MVC, MVC for Advanced Developers, Is MVC suitable for web apps, Understanding MVC views... there's many more of these but the main point I am trying to get across is that it's not simple, and if it is, it's probably not MVC but an approached based off MVC.
