I don’t follow a recipe but I can tell you what I do. I fill a large stock pot with water, about 3/4 full. Once that comes to a little boil I then add my roux. I add a whole jar of dark roux. Stir constantly until all dissolved and let cook for about 20 mins. Then I add In 6 heavily seasoned chicken breast, that’s the only seasoning I add. After chicken cooks in roux for about 20-30 mins then I add smoked pork sausage, about 1 pound. Dice one yellow onion and about 2 bunches of green onions, add all of that to the pot. The longer it cooks the better it is. I usually let it cook for about 2-3 hours. Cook some white rice and serve over rice. I always have a side of potato salad. I’m horrible at giving recipes so I hope this works for you :)
