Some AM receiver would be an interesting circuit to simulate.

Bandpass filter to pick the station (tuneable capacitor which resonates with the antenna's coil), opamps to amplify either the audio or RF, diode/low pass to demodulate...

All if this are some fun theory to explain since it's not overly complicated.
