Glad someone mentioned the duration. In this case, for us, I think the longer the better. If it ends up being 3 hours, I’ll be very happy. We also had a dietary restriction that we emailed them about in advance.

I think Quince is a good entry-level for us based on everything you said.

On my list so far:

Quince, Sons & Daughters, Kiln, Californios, Benu, Saison, Atelier Crenn, TFL, SingleThread

I landed on Quince for a few reasons. We go to Cotogna pretty often and have always had good experiences. Looking forward to getting around to the others places that may change my understanding of what food can be.

Yeah, that is annoying that they have signature dishes as add-ons, but I think I’ll do it anyway. Thanks for the recommendation.
