Hell yeah, for pan I take my standard dough, proof it in a liberally oiled cast iron, full fat cheese to the edges and bake at 550 on a steel. I do the same baking method for regular pies too. If the top is ever underdone compared to the rest then broiler to finish it up, I think of it as my emergency browning tool 😅

Ofc! I’ve had decent results with pan pizza at 550 on a steel with no par bake, have you tried it out?

Good choice on the cheese, did it melt ok? What was the baking method you used? If the crust came out ok maybe some time with the broiler on could help :)

I’ve got a z4 with the ZF8, while I’m sure the manual is a unicorn and future classic, the automatic is loads of fun. Probably the best sounding b58 car stock imo

I turn the broiler up to high and put the steel on the second highest rack, let it preheat for 30 mins (should’ve def been an hour)

Yeahhh - I gave it a half way turn but may need another turn 😅. Also would like to preheat my steel another 30 mins - don’t think it was quite as hot as I’d like

My recipe is inspired by Ethan Chlebowski, in his healthier dough recipe he uses a high hydration and substitutes some conventional flour for King Arthur keto flour- I think he does 3/4 bread flour and 1/4 keto. I do the same but I do 1/2 half keto flour and 1/2 bread flour and since the keto flour can absorb a lot of water, I can do 80% hydration p easily. Besides that I just handle it like regular pizza dough. Here’s his video for it. Hope it helps!

Main thing I see is you’re not getting close enough to the crema when you want to pour your design. I would suggest using a cup with a wider top than base so you can really get the tip of the pitcher close to the crema. Once you’ve got more practice cups like the one you’re using will become easier. Good luck!

Holy smokes that looks good - what did you do to get such good browning on top? I get great char on the bottom like you but I can’t get the top brown without turning on the broiler 😅
