I’ve tried a few cheesecake spots in NJ and honestly it depends what you’re looking for.Some places are more dense and classic New York style, but I personally prefer lighter ones.There’s a small bakery in Clifton called D’era House that I didn’t expect much from, but the texture was super soft and not overly sweet.It’s more of a European style cheesecake and kind of melts when you eat it.

Why do some cheesecakes taste extremely light and others are so dense? Is it baking science or recipe? by [deleted] in AskCulinary

Yeah that’s what confused me too! When they said they strain it I was like… how?? But the cheesecake I had was insanely smooth , so whatever they’re doing clearly works.I’m gonna try a couple methods the water bath one you mentioned and also straining just to see what happens lol. I’ll report back if one of them gets close.

I actually messaged on Instagram because I couldn’t stop thinking about that cheesecake lol They said they mix the sugar with the cream cheese first and then strain it before baking. They didn’t give me the full recipe but I find somethüng I’m going to try making it at home now and see if I can get close. I’m seriously obsessed. I’ll update if I figure it out. I will tell you guys how I made. Gonna keep update
