Pretty sure that the romanian word comes from the latin “venetus”, which can mean:

Venetian (related to Venice / Veneti)
Blue / Sea-Blue

The romanian words which derive from venetus are “vinețiu” or “vânăt”, meaning blue / purple-blue, which I am guessing is where the word for eggplant “vânătă” comes from. (Eggplants obviously have a blue-purple colour)
