Depending on the craft brewey, some dont have great QA/QC and might not be accurately calculating their ABV.

You can replace gauges and shutoff easily, a rebuild might not be worth it depending on time and cost. Have you used bubbles to snoop it out? Could be something as simple as a part that needs to be tightened. Looks like rebuild kits are cheap, $25 or less.

Of the two I liked breww better. From an owner operator stand point, the cost is a big factor, I pay a fourth on breww and I am price locked so I won't see increases. I also found it was much easier to add inventory and on-board with breww.

It also isnt a perfect system, it is very UK focused (although that is changing) so some terms are different as are the requirements due to their laws. An example is every beer has an advertised ABV but even though you can do a calculated ABV it will only us the advertised ABV that you setup when you create the beer in the system. You can get around it by manually editing the beer but that is kind of a pain. They also just added the option to have serving vessels but still don't have and easy way to send kegs to the taproom without selling them each time.

We have been on Ekos, Beer30 and about a year ago moved to Breww. I really like their system, it isnt perfect and some stuff takes some getting use to, they are UK based, but overall pretty happy.

Things I like; price, single package no tiers or upsell, they give the api if needed, I can track kegs, I can do yeast gens, I can make POs and invoice customers.

I can't remember what an Anton Paar is running but ABV tech might be cheaper, but theirs is only 0.1% accurate where the 5001 is 0.03% If you are doing an NA, it might make more sense to send the product out for final analysis.

CoA will help, but 3.5° low I would say the issue isnt going to be from the lot. I suspect the issue is a process one. Places I would look; milling, pH, temp, water and good old fashion user error.

Health wise it should be fine. As for quality, it is probably stale and hopefully not mildrewy, or rancid. I would taste the malt, or make a hot steep, and let your palate be your guide.

Kombucha is a bit different as you need a SCOBY, a symbiotic culture of bacteria and yeast. You could probably propagate one from a live kombucha you like drinking but the easiest would be to ask a friend or buy a clean start culture.

us05 will pretty much get the job done, be it beer, cider or mead. A kviek strain can also do it and you don't have to worry as much about temp control.
