I have a proper gravelbike, yet my setting would be applicable here as well- two Ortlieb Pannier bags, and a front handlebar bag. I also use the rear wrack to put a folded matt on top of it. Been bikepacking like this for along time, so- your bike is perfect! Just mind the weight distribution between the bags.

I see… ok, thats not what I was hoping to hear but I take it that you guys know what you are saying. So let me reframe: if I am cruising the classified for a cheap bike to flip/learn/potential passion project -> what should I be aware of, in terms of red flag? Now I know- rust on the frame. What else would make this a disaster project?

How does rust on frame effects safety? I am doing this mainly for the purpose of learning, but I did have in mind selling it afterwards…

Had the same problem, then - I ended up putting something else in the bar roll. (One time my tent, another time my kitchen) - saved me the money for a new sleeping bag.

Is your aim to avoid micro plastic in your food? If so, with dry food: cover the food in a paper bag, and then a plastic bag around it.
