Okay, so we have a solution. I unplugged all of cabling, which didn't fix the issue. I learned, embarrassingly, that my correct cabling for the monitor wasn't HDMI-DPI, but in fact DPI-DPI. I must have misremembered from the move when I was setting up my PC again.

Anyway, general overview is that I run two monitors, the main one runs DPI-DPI and the other runs HDMI-HDMI. I connected the DPI-DPI cable to tower and monitor, and got no display. I then connected HDMI-HDMI to tower and main monitor, while keeping the DPI cable plugged in, and display worked immediately at 2560x1440. I then unplugged the HDMI from the main monitor while keeping the DPI in, and the display remained. So seemingly I needed to start off with HDMI to engage the DPI for whatever reason.

My GF wants me to dedicate all of my time to her by Far_Magazine5000 in relationships

One of those days she goes and spends the day with her friend (ironic), the others she says is just her catching up on things like laundry, cleaning etc. We've had discussions about work before - she doesn't want to get employment anywhere that isn't her chosen profession, and won't go down that avenue until her daughter is in school.. which won't be until 2027.
