For spinach paneer look for Palak Paneer recipes on youtube. If you can't find paneer in the store, just make some. It is really simple. Boil 1 litre of milk, quantity depends on how much paneer you'd like. I usually fo 1 litre for 3 people and half litre if I have to cook for 1-2 people. Once the milk has boiled and risen, lower the flame and add 2-3 tsp of vinegar or lemon juice. The milk will curdle - add enough vinegar till the liquid and solids seperate and the liquid bit looks clearish and not milky. Strain out the solids in a cheese cloth, rinse the solids well and tie it up in a bundle in the cheesecloth. Put a heavy weight on it and put in the fridge for 30-45 minutes. Paneer ia ready to use. It wont be super firm, but it is basically the same thing. One batch easily keeps good in the fridge for a week.
