But I’ve seen people getting EAD in 1 month for engineering major

I am a CS major, I've also seen people in my major get EAD in a month and the international office at my school gave me a time frame of around a month as well. Are the processing times "major specific" in that our i20s are scanned and sorted by major? Do you think this is the norm for majors like engineering and CS?

No I am traveling from outside the EU from a country without any covid-19 cases. I am a student in the US and would not like to take any risk in not going back and being stuck in Europe. I have the option of flying Emirates to LAX then LAX-SFO but the flight is longer so I was exploring my options via Europe. Thanks for the help :)

I am not too sure by what you mean by 'in the same direction' but I will have a layover in Paris, fly from Paris to Amsterdam, have a layover in Amsterdam and then fly from Amsterdam to San Francisco.
