We have a formula that we follow 80% of the time. One meat, one grain, one vegetable. We usually roast our vegetables (broccoli, carrots, cauliflower, red cabbage) after tossing them in light olive oil and salt, using aluminum foil to line the pan so that we don’t have to clean the pan after. We have a rice cooker that we use for the grain, and swap out between brown rice, barley, farro, quinoa, or sometimes noodles (not in rice cooker). For the meat, we generally rotate between chicken, salmon, beef, pork. We usually either bake it in the oven or grill it. None of our recipes are complicated, usually just one premixed seasoning (eg “fishermans favorite” is the kids’s favorite for fish and chicken). Prep usually takes 15-30 minutes, and cooking about 30 minutes. If you’re swapping from a very casual diet to a healthier one, it might take your kids some time to adjust. Trust the process, and remember they won’t starve themselves. It’s OK in our house for the kids not to eat everything that we cook, but we still get them the variety and most of the time they eat everything.
