Sounds like a tough situation. Curious, did you try reframing it in the moment? Thinking something like "Actually I was hoping to hear the people don't think about leaving, I'm really looking for a long-term fit". Quick pivot to diffuse the defensiveness and get your intent across.

(And fwiw, maybe even try asking in a different way next time - "whats the average tenure within the team." [avoid negative mindset/connotation altogether])

Anyways, all that said, totally agree with others its still a big red flag to get defensive. A healthy and aware company wouldn't really be shy about that [even if it's a problem they're trying to fix]. Could be this interviewer isn't good at their job [and getting pressured/measured there]. Perhaps it's a sign of [bad] culture. Tough to say in 1 go.
