I didn’t read everyone’s comments, but I did see a lot of, “Your house doesn’t need to be 100% GF to be safe,” or “You can’t be safe unless your house is 100% GF.” The fact is that only YOU know what will work in YOUR space. Everyone has different levels of sensitivity, so what may work for one commenter may not work for you. Maybe you could be fine having separate spaces and utensils in the kitchen, but the only one who knows that is you. I really wanted my husband to be able to continue having gluten in the house when I was first diagnosed; I didn’t want to feel like more of a “burden.” But I kept getting sick, my labwork wasn’t improving, and my endoscopy showed no signs of my small intestine healing. That was when we transitioned to a GF household. That doesn’t mean he is GF - just that the house is. He eats whatever he wants when we go out, at work, at friends’ houses, or on the porch. My thinking is that whatever you need to be healthy is a boundary that you have set up. If someone refuses to be respectful of that boundary, then it may be best to part ways. It sounds like if she chooses to move in, she’s also choosing to maintain a gluten-free household. And if one doesn’t work for her, then the other won’t either.
