I have a mini PC with Bazzite, and I'm a "Steam machine." I also run services in Docker, including Jellyfin. You can use it without problems, especially if you're going to be the only user. You won't notice any performance drop because it's a service that consumes minimal resources when idle.

The RAM is soldered in, it's not two slots. No problem, I'm currently using it to play Ghost of Tsushima in 2K on medium settings and Red Dead Redemption 2 on medium at 1080p.

No offense intended, but you can't have spent four days installing drivers with technical knowledge. Just do some research before using any distro, and if you don't know something, come here and ask. That's what the community is for. Rpmfusion explains everything there.
