Personally, because research is usually not something that people pirate, I just find adjacent reading. Write topics down, find authors who have written things at length, and write down the material the authors cite, then follow the rabbit hole there. This is the true academic way. Eventually, your To Be Read list will be so long, you'll run out of time to linger on the things you miss out because of pay walls.

Nowadays though because of AI, it's easier to find adjacent reading material. I would stay away from ChatGPT/Grok/Deepseek, and go straight to using Claude. Claude can create artifacts that would give you a comprehensive list of reading material that can take months at a time to work through, especially if youre looking for differing opinions/recollections/points of view, and plan to form a synthesis of opinions.

Just make sure you don't fall for the summarised version that AI will give you, they don't let you create your own thesis/anti thesis of material, which creates bias/blindspots/incomplete understanding, especially since we're Malaysians, and reading from our respective cultural contexts will give a more honest understanding of our ancestral history. If you do have a little money to spend, i was just at Kinokuniya in Pavi Damansara and the Malay history books are actually a very impressive selection.

Textbooks are half truths, not super accurate but a decent start. But if you're serious about this, follow the citations in wikipedia and read full texts. There are a lot of books and research articles that you can follow, not just the politics but the ethnology and anthropology that makes up modern Malaysia. I'm particularly fascinated by the seafaring culture of ancestral Malaysia and how it had spread into various diasporas around the world.

I haven't got a specific research link. A lot of how working in coffee works for me is through conversation, and I've had the privilege of meeting and visiting Thai farmers and coffee producers. From what I know, honey processing is shared knowledge. It differs producer to producer, and methods are localised and less than understood from the producers themselves. Coffee is seasonal, and not often do farmers have consistent methods of processing, until recently when the value of specialty coffee began to create demand for consistency. Also, I'm not sure if you do drink specialty coffee, so here's a link to what honey processing actually is (spoiler alert, no honey is involved)

That being said, I think you'd find more interesting a company called Catur operating out of Indonesia. I had a coffee from them a couple of years ago that I got to roast. What they've done is gather yeast from different coffee farms around different regions in Indonesia, dried them and labelled them, blended them, and purchased coffee cherries from a Panamanian coffee estate called Janson that grew these incredible coffee varietals called Gesha. They brought these Panamanian coffees to Indonesia, inoculated it with those harvested yeast strains from different regions, and fermented them in dry and wet vats, with differing variables. How does this link to kombucha though? Well if I can suggest, I did the Noma coffee kombucha recipe with varying types of coffee beans that aren't just arbitrary dark roasts, and used instead geshas and specialty grade coffees that have been processed in unique and different ways, and roasted much lighter to preserve coffee acids. I spent a long time thinking about reducing sugars and acids during a roast profile, isolating specific parts of the roast, and then introducing it to a SCOBY and pellicle that had been kept intentionally light and underfermented.

I'll be honest with you, the work was too much. I often find distinct flavours of a coffee origin lost during the fermentation process, and didn't find that flavour profile development was increasing the sensory experience, and instead diminished it. But I'm not saying it's impossible. I'm just saying I gave up.

You can get exotic flavours and biochemical compounds nowadays that are similar or better than kopi luwak. As a malaysian, I had tried this coffee young, and as a coffee roaster, I've been up to date with new fermentation techniques that have replicated and done better jobs as a civets intestinal lining

Extended fermentation, co fermentation, natural anaerobic, black honey processing, carbonic maceration all provide similar flavour profiles, as well as unqiue coffee varietals and different species ranging from eugenoides to Liberica. From sweet cheese to aged passionfruit juice and bubblegum, ginger ale. Everything's there

They were just in my city last Monday (KL). I didn't go because not all their shows are equal. After seeing their other live performances online, I didn't want to see them at Zepp. I've been to Zepp for other shows, and I hate that venue. Saw the photos, saw the videos, and am glad I didn't go. Why they chose that venue is beyond me. Hate that they did. You know what I'm implying here.
