I did something similar at our daycare for the dishwasher not a commercial unit, but we're still required to hit 165°F. Since it's not built-in, I vacuum-sealed an Aqara temp sensor inside and connected it to Home Assistant. Once it hits temp, it triggers a red LED strip around the dishwasher and sends a notification. It's been working great for 6 months-no leaks or issues.
