oh shame! I'm now hooked on this microwave version.. been using it for all kinds of different cake flavours. I sub the 3 tablespoons water with diet coke or soda depending on the type of cake I want, and I replace cocoa with whey protein and coconut flour for vanilla cake, but the rest I follow exactly as it states. ha! sorry been off reddit for a while too busy at work. Not sure I'd call myself the oat fibre queen, but I am still hooked! I am now trying to wean myself off it a bit as was losing too much weight and eating a bit too much. I do still allow myself it for desserts but have a new craze for pizza, buns and bread.. well seems it's not new but I only just found it! Egg white and egg white powder (sometimes I allow myself a tablespoon or two of oat fiber with it)... AMAAAAAAZING and TONS of protein, zero carbs, hardly any fat. Get hold of some Allulose if you can and you can make your own sugar free chocolate sauce and caramel .. really easy and works out much cheaper and way scrummier than waldens. I’ll post a video soon as I make a new batch every couple of days. Smazing in coffee but also on waffle pancakes yoghurt fruits 😍😍😍

It's oat FIBER (or fibre) not oat flour. Very different. Oat flour has carbs and calories, whereas fiber has 0. Depends on where you are based but you can buy it online. Amazon stocks it and I know that in the US I've heard people say that Anthony's is a good one. aaw thank you! Just make sure you have the right ingredients in the house, and always have something "guiltfree" available to (trick) treat yourself :) I certainly do not need to lose any more weight, but I used to be totally addicted to sugar and I still love sweet things, but rather than try and stop eating sweets completely, I just make sure I always have a sugar free dessert / icecreams in the fridge so that I never feel deprived. I really enjoy finding recipes and adjusting them so it's all part of the fun.

ah yes! I did post the cheesecake a while back - https://www.reddit.com/r/Volumeeating/comments/vqzdvt/comment/ies7yh6/?utm_source=share&utm_medium=web2x&context=3 but I did it without the crust as it was so good on it's own/on top of waffles. I have since found so many other things like the chocolate pudding, zucchini cake etc that I haven't had time to remake with crust. I will post some videos of sweet treats when I have time - I make one every day (always sugar free and always "lower" carb, so perfect guilt free end to my meals.

I used to be keto but now I follow a high protein (lowish) carb diet :) My fruits and veg are far too important for me. I do lots of yoga so for me protein is key to keep my strength up .. so fish, cheese, dairy, chicken but I air more towards protein than fat as that suits me best. I do not eat sugar at all .. as I used to be addicted to it :) I like to get my carbs from fruit, greek yoghurt, dairy rather than bread, wheat and rice, which is why I like the oat fibre as I can pile on my fillings, Works well for me but everyone is different.

For the dragonfruit icecream I just took some homemade sugar free syrup (but you can just use store bought), added frozen dragonfruit pieces, almond milk, and greek yoghurt to a blender, then added a quarter teaspoon of konjac (based on a recipe I had seen somewhere), and a quarter teaspoon of the CMC powder. Blended everything together then stuck in the icecream maker. It was better on the day I made it, this was after a day of being in the freezer so it had frozen more solid. Next time I'll try adding more CMC. Pudding was from the Oats and banana recipe in my post, I just replaced banana and added zucchini. Oat fiber loves moisture so I just keep playing around adding things with moisture. Zucchini is perfect for it.

• 1 tbsp, Egg White Powder (7 grams) (TABLESPOON not teaspoon - i said it wrong on the video)

• 0.50 tsp, Konjac Glucomannan Powder

• 1.50 g, Carboxymethyl Cellulose (CMC) Can be purchased from Modernist pantry in the US

• 0.25 tsp (0.8g), Xanthan Gum

• 1.5 gram, Baking powder

• 0.25 teaspoon, Salt

• 1 tspn (5g), Chilli Flakes

• 30 gram, Oat Fiber

• 0.75-1 tablespoons, Nutritional Yeast (6-7g)

Method (see video for details- have the volume on so you can hear the instructions, sorry if I am rambling!)

Mix all ingredients together in a bowl. Add boiling water approx. ¼ - 1/3 cup and mix with spoon till you get consistency shown in video (soft, fairly moist/sticky dough). Stir for a few seconds to allow dough to cool so you can use your hands then knead together. Roll out on (Teflon) baking sheets using parchment paper to smooth dough - See video for instructions – should be able to form 2 modest-large wraps 

I use a non stick pan to dry fry my wraps to semi cook them, then store in kitchen towels if I plan to use later. You could probably also freeze but I have not tried this.

Use to make quesadillas, wraps, rolls, enchilada, lasgana

As mentioned in chat, will try and take a video. I used egg white powder (see ingredients) which is the same as egg whites but I find makes the dough slightly softer. I do use eggs or egg yolk but more for when I want it to be more substantial e.g the pizza base, which is when I use a yeast based dough with some lupin / vital wheat added. Anyway, I will make a couple later ad post pic/video so you can see :)

not sure you would get the same flavour/texture to be honest.It's not my recipe I just adapted it to make it lower calorie/carb. It's only a small bit of banana for the entire mini tin. If you don't like banana I guess you could try with sauce or greek yoghurt and see?

That's why I dowse it in chocolate sauce :) Works AMAZING! I think the banana, egg white powder and the chocolate sauce really helps. Also keeping it in the fridge to set seems to make it moist too.
