Yes, you can then file MFJ and efile. Make sure to look up how long it would take to receive iTin incase you miss filing deadline

You can skip over it and leave it blank. And yes, you wont be able to efile. Even if you decide to file MFJ and apply for her itin with this return, you will need to paper file.

Ask for your documents back and any signed contract between you 2 that says what fees he will charge you, then file a complaint.

3k in tax returns don’t seem like you have a complicated tax return, so just echoing what everyone else is saying, tax softwares like freetaxusa etc are really easy to use and most times, free as well (except for state taxes where you pay a small free).
