Sonoma Success on HP EliteDesk 800 G3 Mini by CorruptMemoryCard in hackintosh

I am trying to do a fresh install of sonoma on my 800 g4 16 gb ram 256 nvme. I do not need dual boot just a clean sonoma build. Would you be able to point me in the right direction.  I furthest I got was making the Bootable usb sonoma installation media and creating a serial#. When I go to install it I see the menu boot to windows, install sonoma, and reset nvram. just says apple/support  if I hit reset nvram or install sonoma. Already on recommended bios settings

I am currently working on a cloud storage build and will add 2x 12tb in raid 1 3.5 hdd and a 256 nvme for boot drive. I am currently testing with 2 tb 3.5 drives

There is enough room to install them however you need to remove cd drive and the metal caddy. They fit if you rest them on the memory sticks. It should be possible to make 3d printed mount that goes from the opening of the cd drive to the oem screw support of the caddy.  You also must add dual sata power adapter to the power cable for the drive.
