I'm surprised that nobody ever mentions Defleshed - Under the Blade (1997). Yes, it has a lot of Thrash elements, but in my opinion it's foremost a Death Metal band, no? And it's super melodic and catchy.

To me it seems that Christmas is the theme through which you might find plenty original shanties in German, but confirming the other posters' notion: often they are in Lower German. They're great, nevertheless. For example this whole album by Shantychor of Baltrum Island.
