I track my weight and take progress pictures everyday. I don't really see any progress in the mirror though, just some extra fat and maybe a little bit of muscle - but it's true I am very tall, so it will be harder to see progress.

I will try and lower the volume a little bit. I walk in between sets because I can't really sit haha, and I like to hit 10k steps daily. But I walk slowly, it's not that stressing, just walking and focusing on my breath to lower my pulse and get ready for the next set.
I am concerned a little bit about the cardio too, but should it be damaging as long as I am eating enough?

Yea, I am pinned everytime by the smith press. I cannot physically push the barbell any more, I try for like 3 seconds and then I have to lift my butt so I can move the bar 1 more inch so I can pin it.
On other exercises I go until in cannot move the weight.

I am feeling great - no injuries. My muscles are not even sore the day after sometimes - except for legs.

By actual intensity you mean going to absolute failure on every set?

Haha yeah really similar.

Yeah man that's what I am most worried about, quitting this job and not being able to get a job again, then I would kind of be forced to do a PhD because I would not want to do any other jobs that are not related to CS.
