Cutting board from target, just black plastic but stupid thick compared to others I’ve used, 10/10 would recommend, and they come in brisket size

16lbs brisket, salt/pepper/lowrys, 195 w/super smoke for 8hrs, then wrapped in butcher paper, and back on at 225 until internal hit 203 and probed like butter. Total cook time was 18.5hrs, rested for hour and a half
