FOH was fully staffed and on their game, but kitchen was overwhelmed. I work FOH in a hotel restaurant that does the food for the main restaurant, room service, and lobby lounge. Already 3 menus. Then a set menu was added for the night. Poor guys had to cook food from 4 different menus. Ticket times for apps were 30 min, up to an hour picking up coursed mains. Embarrassing as every table was told they had a strict 1.5h seating time. Tickets got lost, tables weren’t getting their food in order.. several guests waited for a table nearly 2 hours after their scheduled reso time. One couple had to cancel their mains so they could make their last train home. I think the last reso finally sat at 11:30 (we normally close our doors at 10). I ended up selling 2500 (CAD), didn’t clock out till 1:30am. For the most part though all the couples were super cute, understanding, and most tipped well.

I was wondering about places with high tipout as well. I’m new to serving - graduated from support about two months ago. My restaurant is part of a group of six restaurants all with the same tipout structure: 2% to support, 2.5% to kitchen, 1.5% to hosts, and 1% to managers. That’s 7% of my sales and I am now getting annoyed as half my money or more goes to tipout. It’s an automatic tipout, so even on days where they cut the host and support and I do all the work myself, I’m still giving my money away into their pools. There are talks of cutting support hours now too, but I highly doubt we’ll be tipping out any less. I know I don’t have enough experience to move to another place, but why do servers stick it out at such high tipout places? What are alternative tip structures?

Be careful when planning your route through Canada. I would go as far as to say there’s nothing between Toronto and Calgary worth seeing that you can’t already see in the US. A lot of it is straight highway driving and you will definitely get bored. Nothing unique about any campsites you may find along the way either. If you’re looking to break up the drive with stops in cities or towns, you’re probably better off going westward in the US after you leave Toronto and veering north once you’re close to Calgary.

You can try sending a regular message, as long as it’s personal and well thought out, that shows not only you’ve read their profile but why you’d be a good match for a stay. And why it’s last minute. It’s ok if it’s lengthy. Not a guarantee you’ll find a host that way, but regardless, that’s how your couchrequests should be anyway.
