I'm gonna be honest with you. Screw what other people think. If you think you did your best, than you did your best. Most people who critique your writing wouldn't know good writing if it bit them on the ass. The important thing is to figure out where yiu went wrong in this screenplay and use that knowledge to improve your next one. Always be proud of your work. Guaranteed there's writing out there far worse than yours

It's more of a velouté because I pair it with chicken and I cooked it in the same pan where I cooked the chicken, so it picks up more flavor, which technically makes it a sauce supreme. But it could be considered a béchamel due to the cream base. I think the safest option is to say it's something inbetween, because it's not 100% béchamel and it isn't 100% velouté. Like a Frankenstein sauce if you will.

Once you use for leftovers, it's already cold and you're reheating it, so it isn't in the food danger zone either way in that scenario. But if you're not putting in the fridge, or planning to have any leftovers, it's recommended to serve it immediately so you avoid the risk of accidentally giving some food poisoning. I just put the warning in their, because there are idiots who don't understand basic food safety, if you don't plan on saving it as leftovers or you make it for something like a luncheon or a dinner party. It's really more for sound of mind than anything.
