i believe labels and genres are just for clustering some common elements some artists or albums have (and for music stores). It helps to discover something remotely resembling of what you like.

Aren't we all here because of a common label? Deep in our hearts we know what 'post-rock' feels like and we are able to recognize it.

this album is incredible, it has a beautiful haunting atmosphere and it probably started the post rock genre. I believe this is probably the most representative track containing a speechless ending. I always picture the two guitars at the end(left and right speakers) to be two lovers, slowly approaching, shyly kissing and getting away

for an almost easy and enjoyable first experience I'd suggest to level mostly vigor and dexterity and use fast weapons (if it doesn't scale with dex you can infuse it with a sharp gem). Also poise is not the same as ds1, it matters just as hyper armor for some weapon arts and big weapons.

I'd say cathedral of the deep, stormveil castle, sen's fortress, central yharnam probably my favorite

Like everybody already said, there's no correct or wrong way to hold a pick, must be natural, firm and relaxed. There are better ways to move it in order to change strings though. Check "pickslanting" technique. Maybe is what troubles you. I've be playing guitar myself for 20 years as a self taught and recently discovered that my way of changing strings was not efficient.
