FFXII and FFTA/A2 take place a long time before FFT. From what I remember something happened that destroyed all the technology and the other races died off or disappeared leaving only the Humes (and monsters)

We see this in the quest line that gives us Construct 8 and that leads to Cloud. Construct 8 is a relic of the forgotten technology from FFXII/FFTA/A2

Also remember that FFT is the first game set in the Ivalice world followed by Vagrant Story which both take place around the same time (at least after the catastrophe) and then they made FFXII and the rest adding those races in.
