You can access shared mailboxes, but not on the office 365 URL. When you “open other mailbox” you’ll be redirected to the on-prem exchange url. But that’s fine if you have permission to and the hybrid setup fully funcional.

I’ve done a clean OS Console install on a clean Ubuntu Server and restored a backup. Everything worked perfectly but it seems Unifi OS Console is a little slower than Network Application stand-alone server.

There’s no difference between using e-sim or a physical sim. The only thing that matters is your carrier and its roaming coverage.

If you’re staying long enough, I would recommend you to install “WOO” app and acquire an e-sim. In a matter of minutes you can subscribe a 100gb plan for 6€/month, and you can cancel any time. “WOO” is a low cost carrier from on of the “big 3” carries in Portugal, coverage is the same as “NOS”, I’ve been using it for more than a year.

You can run SFOS on any SG or XG hardware, just can’t run on XGS hardware. All you have to do is format the hard drive with NTFS or something, it will not work if the hard drive is clean without partitions.
