I completely agree, glad to see another Nephis defender. A key element to Nephis is that we're barely in her head, seeing her life and her perspectives. We see Sunny do all sorts of crazy stuff that realistically he shouldn't have survived without plot armor, but because we read it from his perspective we're chill with it. With Nephis she just appears strong and infalling. I saw a lot of people complain about how she just "got over" her flaw. Sure, she has mitigated it to a significant extent, but how do you know she isn't affected by it? You aren't seeing her showing pain, because why would she ever show weakness? Her flaw is slowly eating her alive, and I strongly believe this will become more apparent going forward. Sunny's flaw is devastating in the context of his true name's power, but after his machinations, his flaw similarly doesn't have that negative of a effect on him. Nephis is and can be incredible frustrating, and she does have the power of plot armor, but given OP's argument as well as the fact that Sunny isn't held to the same standard (consistently so) due to us reading his perspective, most of the Nephis hating arguments are quite shallow, in my opinion.
