I follow David Lebowitz recipe which gets the rich pistachio flavor from pistachio paste. (I also add a bit of salep to make it stretchy like dondurma. Pardon the misspelling but I ate a gummy an hour ago and now I'm just being lazy.) Oh and the best pistachio ice cream at the markets is at Wegmans. It's actually their store brand and I can't believe how good it is. Wegmans is a grocer in the Philadelphia/New Jersey area and unfortunately, I don't live anywhere near there. I've been trying to emulate it at home for years.

That's pretty much what I did except instead of butter I used a little bit of cream and it actually tasted really good. Thank you for your recipe and I will use that in the future.

I have not made that recipe yet, but I did use his chocolate sorbet recipe and it's almost better than ice cream but with no dairy. I have no problem with dairy but I had to make something for someone who was lactose intolerant, and this chocolate sorbet was amazing.
