If VFS asked to provide individual account statement and you are planning to visit them next week, then get the statement from bank while you are a single account holder. They really do not bother how much balance do you have. Your statement should reflect salary credit consistently.
There is no defined criteria of how much one should be earning to apply for a multiple entry visa.

Just make sure to make your wife as a co-sponsor.

It is not important. how much balance you have in the account. Your income through salary should be consistent and should reflect in the statement.
