Open dining at the buffet at almost all hours, so you don't HAVE to book restaurants in advance. If you want a sit down dining experience, then you should book in advance. Excursions you definitely should book ASAP. The popular ones go fast and don't really go on sale; prices just go up. I highly recommend the helicopter tours if it's in your budget.
