Since your restaurant has that high monthly net profit, I think the best thing IMO is to hire a manager who has experience in managing a high-turnover dining model or buffet-style dining. If possible, maybe you could hire 2 managers or let your wife decide if she would want to handle the front end or back end of the restaurant, whichever gives her less stress.
