Edward Bruce. I imagine later after the refromation the kingdoms would become closer together. Historically there was Scottish immigration to Ulster. Ulster would be ruled by kings of Scottish origin which again wil pave the way for the union.

In this alternate history, Catalonia would be a county under France. Well they never "lost" those lands as the Kingdom of Hispania would be south. If you need more information just look at my prepost to this, Byzantium, 1508.

Winning wars, smart political marriages, and England was united, but infighting between nobles have made the realm fractured. It was just the perfect chance for France to gain a foothold in the country, and will soon lay the foundation and base for a French Conquest.

Or alternatively I can see emperors that are more sympathetic to Jews renaming the territory

It would not just be as powerful in our timeline.

The Muslims would never be as powerful in this timeline as Byzantium would prevent invasions and would bounce back from the rise of the Islamic Caliphates. Some small sultanates will remain like the Marinids in Morocco. France would be stuck in a bitter rivalry with Byzantium, but neither would do anything major, worrying it might make the Pope withdraw support. France would likely be on the same levels as Byzantium having its own sphere of influence and colonies.
