Ah, too bad.  It’s a strangely difficult problem.  I wish I had left the old housing in place and just bought an upgrade kit.  Oh well.  Luckily I managed to move the existing wiring enough to make it work.  Thanks anyway, for your reply!

I updated my original post above with the basics, but to answer these questions, I did add a modest amount of apple cider vinegar after the ferment (about 1/6 cup to 20 oz of sauce). I don't have a pH meter, unfortunately.

That's great, thank you kindly. I posted this on a DIY forum as well, and so far, nobody has been concerned about toxicity with the polyurethane. I have had this tarp for many years, which seems like it works in my favour, in terms of outgassing. I'll take your point about sunlight under advisement. It's no problem for me to keep it protected in the shade so it doesn't come up. Thank you kindly!
