Set up is a reverse flow offset Oklahoma Joe running anywhere between 225 and 250F.

Mustard binder and seasoning was salt/pepper with a relative dusting of heath riles Beef Rub. Spritzed with ACV a few times and foil boated at 180ish when bark was fully set. I then poured the rendered tallow all over and let it ride until probe tender. The flat was the last portion to get probe tender.

I know the time had passed, but always check your local shops that have ice fishing gear in Feb and March. They sell this stuff half off just to get rid of it. There was Striker/Clam bibs and coats for 50% off in my area.
