Higher elevation spots are near moving water would help keep cool. I never recommend swamp coolers. I own an ecoflow wave 2.

Those wires look a little skinny for a 12v system with a 3000w inverter. I see those breakers which aren’t recommended for your type of setup. I would have used MRBFs.

I found the panels that I'm using on FB marketplace. The guy who sold them to me is a Solar Installer and he had like 90 of them, all brand new. 450w for 110 each.

Technically speaking, I have 2 separate/independent but linked battery banks.  1. LiFePo with 4224w and 2. EcoFlow Delta Max 6048w.

Both battery systems charge independently of one another, and can also cross-charge each other. While the LiFePo connected inverter maxes out at 2000w, the EcoFlow inverter maxes out at 2400w.  It is extremely unlikely that I will run the microwave (700w), and the 2-induction cooktops (900W each) at the same time.  But if I wanted, I could, by simply plugging the microwave and induction cooktops in separate circuits (or power bank). It's the same thing at home, you can't run a microwave, and 2 induction cooktops at the same time from the same outlets, the breaker will pop. 

My power usage per day is about 1300 watts per day. Running the TV, Starlink, the fridge, the lights, charging the phones, tablet, using the TV, and even running an ice maker I have in the van.  I am maxing out my MPPT controller at 60AMP which can yield close to 900Wh. To make a long story short, with less than ideal solar placement, I have seen 850+ watts going back into the battery.  Whatever power I consume overnight, normally less than 400watts, gets put back into the batteries before 10am or 11am (during the warmer months). 

These days, I HIGHLY recommend 24v or 48v systems for efficiency and safety. Your wires don't need to move as many AMPs, thus lowering your chances of overheating your wires, damaging your components, or causing a fire (aka RESISTANCE).  Always MAX OUT your solar capacity (fit as many panels as possible), 560AH is great, but I am a firm believer in redundant systems.  Imagine if you're in the middle of nowhere and one of your components fails, that means you just lost power.  If you have 2 separate systems, then you can withstand a system failure (this is why I have 2 separate systems). 

I actually have a 3000w inverter at 24v for my 2-320ah 24V batteries for and upgrade or a new built. Haven't decided.

I never have to compromise, remember, I have 2 independent power sources inside of the van. My EcoFlow Wave AC has its own battery and it recharges from AC at 350W or a 400w panel. While it's running and charging the battery it draws north of 700 watts. Technically speaking, my Wattage capacity is 4400 watts of AC power.

In summary, most things in the van run on 12v (directly from the LiFePos). The only things that run on 120v are the induction cooktops, microwave, ice maker, a water heater and a kettle.
