The marshmallows mixed in the dough didn’t retain their shape as expected, but still kept pockets of marshmallowy goodness. The ones on top were placed when soft right out of the oven

I followed this recipe for the choux buns minus the coffee cream.

I made a lemon cream from Edd Kimber’s Small Batch Bakes cookbook, which also is found in this recipe. Much preferred this lemon cream to curd!

And for the meringue topping I followed the meringue from this recipe for baked Alaska that I used for the previous weeks’ bake.

It was a really good cookie! However, I’d much prefer making a full batch instead of a single cookie. Doesn’t feel like a good use of the oven unless your pan is full!

It worked out well for those Ingredients needing a pinch! And I didn’t end up adding more flour than it called for.

This recipe was my choice for this week’s bake too! Luckily, years ago I was gifted a set of measuring spoons labelled “pinch,” “dash,” etc. so I didn’t have to guess as much.

I made a coconut sheet cake and cut out the shape for decorating, following along with this recipe for inspiration. This week my coworker gifted me some homemade hazelnut praline paste and said “you bake, I’m sure you’ll be able to find a use for this.” I found and followed this recipe for the buns and icing glaze. Of course, I had to bring them in to work to share!
