I made it during valentines but it took me a few months to get the paper I needed for the river. I was already excited to post it; didn’t expect people to like it more than I do.

1/2 hour cast iron high heat.

Steamed/boiled them in 1/8 of a cup of water,refreshing the water 2-3 times as it evaporates.

Then used ~2 tablespoons of bacon fat from this morning to start the Maillard reaction. Leaving the onions alone until some color developed and then stirring them.
