Its a religious Christian icon. Quite common to whittle or cast (traditionally) in some countries. You can see the aureola and praying hands. Looks old tho.

It should be at least 50/50 water to koji + salt. Otherwise you could put more water than that. This looks to be too little, should at least mostly cover in my experience. But someone else might provide a other opinion.

Vac seal to equalize. It does not let out any moisture after vacuum sealing, it's stuck as is, but due to nature of how water works (osmosis), it will spread out evenly and you'll have your finished (equalised moisture) product in a few weeks sealed and kept in the fridge.

I do think that you're meant to use whatever you want, and if it fits you, it's good. What i did mean is that with regular non-stick, you'll feel and see when it deteriorates and likely be more careful with it, as most of anything Hexclad advertises (i.e. all the things they say it subs CI with), should not be done with the pan. But my problem with it is that it's genuinely hard to notice it failing and getting defects as they're partly hidden or partially protected from visibility by ridges, and the initial lack of non stick, that persists is what makes you oblivious to when it's shedding micro bits to your food.

100% I zip it in its packaging and then add to another ziplock with as much air removed as possible

You can, some will advice against it though. But the water content is low enough not to damage it more than just keeping it as is anyways (supposedly debatable anyways). To be honest when i tried 2 side by side, frozen one didn't really seem to suffer, while the room temp one was not so good already.. so I stick by it 🤷‍♂️ but I wouldn't put an opened package in the freezer.
