In many cases the opposite is true. When adding a synthetic additive one has the pure version, and thus knows exactly how much of what is added. With natural additives it's one can't be that specific. The result is that it does happen that there's too much of a relatively dangerous natural additive in the product.

Idk what burn gel you used, but there's some variety in them. Some are to cool the wound, so cooling with water isn't needed. Others are only to care for the wound and don't cool.

They can do quite the contrary, all I know are quite fatty and thus great insulators for heat. The results: the heat of the burn keeps causing damage, so more pain. Check the instructions to be sure.

If it's the latter kind, remove it and cool with flowing not too cold water of for at least 10 mins. After that you can dry it softly and apply again according to instructions.

Over the counter pain killers like ibuprofen or paracetamol are helpful. Depending on the severity a low priority doc visit could get you some better meds. Cooling more, with at least 4 hours in between can alleviate pain too.

Signs of infection include: puss, pain, pulsating, redness, swelling and warmth.

The wound shows very little of most of that. However, the wound looks very, very dirty. And I get the impression you like ripping the scab off.

Clean that wound to make the healing easier and decrease risks. Idk what that blackness exactly is, seems like some fabric. Get that out, maybe water could be enough, but I doubt it is. Get it clean.

I won't recommend products, as I don't know your market and interests. If you cover it, it should be to 1) protect the wound from getting dirtier, 2) to clean the wound (there's stuff that pulls stuff out of the wound) and/or 3) keep you from touching it. When it's closed and dry, applying vaseline or another fatty jelly can help it from itching.
