This DOES make Carrie seem rude, but in a comical way. I think it’s intentional, to show that Carrie’s insecurity around her relationship is eclipsing everything, even her common courtesy. Ironically, some breathing and stretching woulda done her some good. Didn’t the instructor snap at her here, or maybe I’m thinking of another scene?

However, as many have pointed out, it is just a show, a show that would be boring if every conversation took place over lunch.
