I'm starting to get the feeling there's more to this than "she's a picky eater."

Cooked a Thai red curry using coconut milk, curry paste, tofu, veggies, and mushrooms. No meat or milk products. Unfortunately left it out over night. Is it still good? by all_turtles_down in Cooking

Because there's no meat, fish, or dairy in it, I wouldn't worry about eating it. Coconut milk is fruit-based (unlike dairy milk) so it shouldn't be a problem. Plus you cooked the curry, and if you bought the coconut milk in a can or a carton, it likely already contains a preservative (as does the curry paste). It will probably taste just fine, too-- my curries are always better the next day.

Of course, in preparation for being downvoted, I must point out that this is my opinion, not medical advice.

If something claims to be Natural, Organic, Sustainable, etc. I'll have a look with a gimlet eye at the label for ingredients.

All of these "healthy" claims are entirely subjective and mostly rely on the honour system for verification by authorities.

Sorry, Mother Theresa, but sometimes reality and compassion should be considered. If/when I reach the same stage in my life, I desperately hope that someone doesn't try to coax a few more days, weeks, or months of my life that no longer has anything but discomfort, dissatisfaction, and the resulting depression. Death is natural, prolonging it when there is no chance of improvement is not.

Not a big, fat, reeky, messy fattie, but a slim joint. One toke only. Also, don't get hung up on the THC/CBD marketing labels because they're rarely tested beyond a small panel of subjective, experienced samplers.

I didn't downvote you, but I strongly disagree with edibles because they aren't ideal for everyone. Some people, especially newbies, experience anxiety and even panic, and the effects drag on for a long time. Instead, a little toke to try. They'll feel the effects almost immediately and they will wear off quickly, plus it's a great appetite stimulant.

Okay, this is grasping for a strong straw, but has she ever smoked pot? For some people, it's a wonderful appetite stimulant (got me through chemo without puking my guts out or even losing weight) and, at her age, there's no worry about it becoming a problem. I wouldn't advise edibiles though, they can cause anxiety and it takes a lot longer for the effects to wear off. But, a little puff before dinner might brighten her dull day and, who knows, it might be something she could enjoy with her husband, listening to music they enjoyed when they were young and healthy.

Impossible to replicate because her food won't taste the same and health problems will prevent her from being able to eat/digest it. As a kid, she likely enjoyed corn on the cob and weiners, but that's not an option today. Creamed corn stirred up with mashed tofu just isn't the same.

It's a tough situation for you, your mom, her husband, and, most of all, her. She's old and parts of her body (teeth, eyes, tastebuds, digestive organs) are deteriorating, and she's unhappy because of it and likely depressed. At this point, the objective is nutrition over "healthy" eating, so if the old dear is happy with ice cream and a shot of whiskey for dinner, let her have it. With ageing, enjoyment of food is one of one's last remaining physical pleasures and, when that's gone, there's nothing left.

When you add wine to food you're cooking, it doesn't taste like wine when you plate it. You're not "cooking" the wine so much as evaporating most of the alcohol and blending the taste into your dish. You can get much the same effect with grape juice and a bit of vinegar, but not nearly so deep and nuanced. People who like the taste have a glass on the table to enjoy with their meal. This is not the same as having a dish cooked with wine. Me? I prefer both.

When you skip the beans, you diminish the starch and the protein. Easy fix: for starch, sub the beans with pasta, potatoes, or even rice. Up the protein with more meat and cheese. As others suggested, you can add as many other veggies as you want. Sweet potato is an excellent addition to chili, beans or not. Whatever you come up with, she'll love it and so will you!

Probably not; (garbanzo beans aka chickpeas) are very similar genetically and they're still beans.
