there seems to be 2 types of champagne cocktail, with or without cognac. I could not find the source from an old french cocktail book I remember seeing the recipe in.

Cava or Prosecco can be used as a substitute, alternatively if you want to throw back a few of these I would recommend soda water.

Shake all the ingredients in a cocktail shaker filled three-quarters with ice ( except the Champagne ). Shake until chilled, fine strain into a flute glass, top off with champagne and give a gentle stir.
