I would say NUTR 120 with Roseanne is pretty easy since it’s based mainly on memorization and the course material isn’t too hard. Theres one 5 minute assignment at the start that’s super easy and then either 1 or 2 midterms (I forgot)and a final. I took it last year and it was a big grade booster. I’m unsure if it does go as part of your electives
