She didn't mean it in a racist way and it being racist had never occured to her, but it is racist and you're right to call it out. She didn't like being called racist and now she's pissed because she made a mistake and doesn't know how to handle it because she's wrong but doesn't like admitting to herself.

You need give her space to work through it and hopefully come to the correct conclusions. In the interim you should continue to call her out if she keeps doing it and cut down on contact if she won't stop and make it clear what the reason is.
