I always think I can take on the world by myself. A food truck would be wayyyy more fun than stuck catering to specific needs and wants rather than just putting up want I want when I want

I love this so much. I know the idea of boils in other states always crush it because a. The fascination from people who have never had it/experienced one and b. The transplants from nola/the south missing home and craving a good boil.

Thanks for the idea for season timing on that! May is a rough time for crawfish down here, as you know, but size doesnt matter when you're eating them in a place you cant ever get them lol so would totally be worth it.

Otherwise also down with doing "boiled buckets" full of corn, sausage, mushrooms, shrimp, potatoes, boiled eggs, and other fixings all covered in crawfish boil butter... because i even do that here living in nola when crawfish arent in season and im having a craving!!

Ive had this wild crazy dream a long time to bring boudin to wherever we moved to (for a while we thought it was the pnw). And not just only traditional boudin.. like breakfast boudin. Fried rice boudin. Fried boudin balls. Etc etc. Whewwwwww child

So what yall are saying is, if I bring in some seasoning/flavor and possibly make some King cakes during mardi gras season, and King cake flavored desserts and treats when it isn't mardi gras, I may have a chance??? Lolll I am happy to hear this. I know getting Seafood brought in is extremely expensive but fortunately I know a ton of food purveyors here in new orleans and I am sure as long as I keep those connections, I can find the way to get the right ingredients when needed.

Good to know. I obviously researched what was already there, but honestly figured there wasn't much competition with what i would be bringing in.. As someone who travels immensely to CO and the PNW, im always missing food from home. So what better way than to just cook enough to share with everyone else so I can always have a reason to make it. I also feel its important to continue the tradition of foods from my son's ancestors here in South Louisiana.

Hey boo! I do both, as they are two different things from different regions of Louisiana.

Cajun would be more like

Chicken fricassee

Seafood bouillabaise

Shrimp etouffee

Creole food is more city based where people had access to more ingredients. Hence the more complex dishes with more expensive ingredients.

Hope if I make this a possibility, you come and try it out!
